THE 1993 HARVEST, A vintage characterised by its precocity. Despite very average temperatures, the summer was remarkable both for its amount of sunshine and the drought which lasted until the harvest began. Opens with notes of red-fleshed peaches, rapidly evolving to cashew nuts and dried herbs. This aromatic experience finishes on a note of lightly toasted brioche.
Dom Pérignon is Vintage only. Each Vintage wine is created from the best grapes grown in one single year. To reinvent itself by interpreting the unique character of the seasons. To dare to declare the Vintage only when the harvest meets its ideal. Such is the commitment of Dom Pérignon. Dom Pierre Pérignon took up his duty as cellarer at the Abbey of Hautvillers in 1668. For 47 years he continued to invent: improving the grapes’ quality with new viticulture techniques, blending different crus and grapes varieties to obtain the finest wines, gentle and fractional pressing to obtain white wines from black grapes, all those innovations became the fundamental rules of the “method champenoise”.

The first hints of dried herbs rapidly give way to candied grapefruit and cinnamon. This is rounded off with notes of biscuit and raisin.The sensations follow one after another closely, with rhythm, precision and intensity. The initial density evolves into a creamy amplitude. Its finesse draws out and takes off on a sappy note.
