The year 1998 was marked by two unusual and opposing occurrences: the spectacular burning of the grapes caused by record high temperatures in August followed by exceptional rainfall in September. The First Plénitude of Dom Pérignon Vintage 1998 (released in 2005) was a model of balance. In its Second Plénitude, invigorated by the additional years in the cellars, Dom Pérignon P2 1998 transcends the potential of the vintage. The dark, mineral, iodine, spiced singularity of Dom Pérignon vibrates higher and clearer than ever.
Dom Pérignon is Vintage only. Each Vintage wine is created from the best grapes grown in one single year. To reinvent itself by interpreting the unique character of the seasons. To dare to declare the Vintage only when the harvest meets its ideal. Such is the commitment of Dom Pérignon. Dom Pierre Pérignon took up his duty as cellarer at the Abbey of Hautvillers in 1668. For 47 years he continued to invent: improving the grapes’ quality with new viticulture techniques, blending different crus and grapes varieties to obtain the finest wines, gentle and fractional pressing to obtain white wines from black grapes, all those innovations became the fundamental rules of the “method champenoise”.
Chardonnay & Pinot Noir
After a short breathing period, the wine has an intense, full and radiant bouquet, with notes of honeysuckle, orange coloured fruits, toasted almonds and hints of iodine sensations. The creamy chewiness characterizing the vintage is channelled in a direction that is edgy yet embracing, with a wave of aromatic persistence. The finish – smoky, biting and full of energy – offers balances and harmony.
Start with langoustines on a bed of shredded papaya salad marinated in lime juice. White meat such as guinea fowl in a red Thai curry will complement this vintage. Try a sorbet made with osmanthus, a peach-flavoured flower native to eastern Asia.
